Chocolate Cherry Bars

crunchy chocolate crust with a creamy chocolate filling topped with fresh cherry jam

Ingredients
  

Chocolate Crust

  • 15 Oreos
  • 3 tbsp butter

Chocolate Filling

  • 1 cup heavy cream
  • 1 cup chocolate chips

Cherry Jam

  • 1 cup fresh cherries
  • 3 tbsp sugar
  • 2 tbsp water
  • 1 tbsp cornstarch

Instructions
 

Chocolate Crust

  • Crush the Oreos. Mix with the softened butter and press into a 8x8 pan.
  • Place pan with crust in the freezer to set while you make the filling.

Chocolate Filling

  • Heat the heavy cream in a saucepan until bubbles start to form, but don't let it boil. Remove from heat and add chocolate chips. Whisk until combined and smooth.
  • Remove the crust from the freezer. Pour the chocolate filling on the crust, using a spatula to smooth if needed.
  • Place the pan back into the freezer while you make the cherry jam.

Cherry Jam

  • In a small bowl mix the water and cornstarch.
  • Pit and dice the cherries. Place them into a saucepan with the sugar and place on medium heat. As the mixture heats up whisk to combine. The cherries should get soft and the sugar should start to dissolve in the cherry juice. Continue mixing until sugar is dissolved and mixture starts bubbling.
  • While you are whisking, turn down the heat and slowly pour in the water and conrnstarch mix. Continue whisking to avoid forming clumps. You may not need all of the cornstarch mixture. Once the cherry mixture starts to thicken, stop adding the cornstarch mixture and remove from the heat.
  • Let cool for 10-15 minutes.
  • Once the jam is cool, remove the pan from the freezer and evenly spread the jam over the chocolate filling. Place in the fridge to cool and set for one hour or until completely chilled. Enjoy ;)

Notes

  • you could make frozen cherries work if you can't find any fresh ones
  • my chocolate of choice would be dark especially for these recipe, just to make it extra rich and decadent (but you do you!)
  • right before I add the water/cornstarch, I like to give it a quick stir to keep the cornstarch from sticking to the bottom
