These cookies look fancy, but don’t be fooled, you can make them in just a few minutes with only 4 ingredients. They are soft and chewy cookies, the best kind, in my opinion.

They are made with a box of red velvet cake mix, which I like to keep on hand so I have a super simple dessert I can make on short notice. You could also make this recipe with different flavor cake mixes, but red velvet is definitely my personal favorite.

Red Velvet Cookies
Ingredients
- 1 box red velvet cake mix
- 2 eggs
- 1/2 cup vegetable oil
- 1/4 cup white chocolate chips
Instructions
- Mix the cake mix, oil, and eggs in a medium bowl until well combined. Place the dough in the fridge for 20-30 minutes to chill.
- While the dough is chilling preheat oven to 350° F. Greast a large cookie sheet.
- Remove the dough from the fridge and scoop into small balls and place on cookie sheet. Bake for 10-12 minutes, or until done.
- Let cookies cool to room temperature, then melt the white chocolate in the microwave until smooth. Transfer the melted chocolate to a small ziplock bag. Cut a very small hole in one corner of the bag. Drizzle the chocolate over the cookies. Let the cookies set until the chocolate has hardened. Enjoy
