Sugar Cookie Pizza

Chewy sugar cookie crust, rich cream cheese buttercream, and fresh berries to top it off. If you need a summertime treat, this is it. There’s nothing like fresh berries in the summertime, so adding them to desserts only makes sense.

It’s all the perfect textures and flavors in every bite. Thinking about it is making me hungry. The best part is, it doesn’t take long to make, and you can eat it right away!

Berries & Cream Cookie Pizza

Ingredients
  

  • 32 oz sugar cookie dough
  • 4 oz cream cheese (at room temperature)
  • 4 tbsp butter (softenend or at room temperature)
  • 1 tsp vanilla flavoring
  • 1/2 tsp salt
  • 2 cups powdered sugar
  • 2 tbsp water
  • 1-2 cups fresh berries

Instructions
 

  • Grease a 11×17 baking sheet and preheat your oven to 350° F.
  • Press cookie dough into pan so that it is spread evenly. Bake for 15-20 minutes, or until golden brown.
  • While the crust is baking, make the icing by placing cream cheese, butter, vanilla and salt in bowl of stand mixer. Beat until well combined 2-3 minutes. Scrape down sides of bowl and then slowly add powdered sugar on low speed. If icing is really runny add a little extra powdered sugar. Continue mixing on low and slowly add the water. Scrape down the sides of the bowl one more time and then beat on high for 1-2 minutes.
  • Once cookie crust is cooled to room temp, spread the icing over the top. Arrange berries on the icing as desired. Enjoy 😉

Notes

  • You could make cookie dough from scratch, however, storebought cookie dough will work just fine!
  • I like to use strawberries, blueberries, raspberries, and blackberries. But you really could top this with any kind of fruit.
  • Store in the fridge 🙂 I like to let mine chill in the frige for a few hours before eating, because I like it better cold.
